- 3 tablespoons unsweetened applesauce
- 2 tablespoons molasses
- 1 teaspoon cinnamon
- 2 tablespoons water
- 3 cups rolled oats
- dried blueberries
- 1 cup walnuts
Making the granola: Preheat oven to 350 degrees F. Add the oats to a large bowl. In a small saucepan, combine molasses, cinnamon, applesauce, and water. Bring to a boil over medium heat. Once it the mixture has started to boil, remove from heat and stir. Slowly add the warm wet ingredients over the oats and mix until it is well combined. Add the dried blueberries and walnuts to the large bowl and mix well. Last step, evenly spread the combined oats mixture to a baking sheet so it appears to be an even layer. Bake for 20 minutes in the oven, and flip the oats halfway through.
Serve with greek yogurt and fresh fruit as a healthy breakfast or a filling snack!
