grapefruit zest trail mix cookies

  • 8 tablespoons (1 stick) unsalted butter, melted
  • 1/2 cup sugar
  • 2/3 cup brown sugar
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • 1 1/2 cups all-purpose flour (or whole wheat flour)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1 cup rolled oats
  • 2 cups chopped pecans
  • 1-2 cup chocolate chips
  • 1/2 cup unsweetened, dried coconut flakes (optional)
  • 1/2 teaspoon freshly grated grapefruit zest

Making the dough: Preheat oven to 350 degrees F. Set up a large baking sheet with parchment paper. Using an electric mixer or a kitchen aid, cream the sugars and butter together until is it well mixed and appears “fluffy”. Add the eggs and vanilla and mix on a low speed. In a separate bowl, mix together baking soda, salt, spices, oats, and flour. Slow add the dry mix to the wet ingredients and mix. Lastly, stir in the remaining ingredients, including chocolate chips, pecans, and grapefruit zest. Bake until golden, 12-15 minutes.
